Happy April!! March was a crazy busy month for us. Winter tried to hang on and I think Spring finally won out. I was successful on my March Blogging Challenge… Woo! Now I don’t know what to do! Guess I need to come up with a plan. Maybe I’ll start posting some awesome recipes? Or I could throw myself into some crafting? I need to be better about documenting my cooking and crafting processes so I can share them with you!
Lunches this week are going to be mostly egg salad I made from our Easter eggs. I was planning originally to make some Deviled Eggs, but the eggs refused to peel nicely, so they all got chopped up. It’s extremely tasty either way.
Here’s my menu for the next week:
- BBQ Pork with some awesome last minute coleslaw from a free cabbage I received today
- Sausage and White Bean Soup, and I’m taking the suggestion from the comments and adding some spinach!
- Oven Fried Chicken
- Posole leftovers
- BBQ leftovers
- Burritos and Tacos
