Okay… Meal plan time! We had a really busy weekend celebrating Pam’s birthday and ate way too much food, even though it was all really awesome and tasty. There were Deviled Eggs, Mini Apple Pie Roll-Ups, Stuffed Mushrooms, Spinach Artichoke Dip, Cheese Ball, a Zebra Cake, Pink Lemonade Cupcakes, and little Sesame Ginger Meatballs. We all had a wonderful time, the weather was amazing, and it was a fun party all around. Whew! Now it’s back to slower days and easier menu plans.
- Tonight we had leftover chicken that was tucked in the back of the fridge, Cheesy Rice, and broccoli
- Stuffed Peppers (planned extra for leftovers, as usual)
- Chicken, Sausage, and Potatoes (I change it slightly and usually add a veggie like brussels sprouts and my own blend of spices-rosemary, thyme, garlic, pepper, etc)
- Tofu Stirfry
- Corned Beef and Cabbage with Irish Soda Bread (the white version). I’m excited!
