Menu Plan Monday #8

Okay… Meal plan time!  We had a really busy weekend celebrating Pam’s birthday and ate way too much food, even though it was all really awesome and tasty.  There were Deviled Eggs, Mini Apple Pie Roll-Ups, Stuffed Mushrooms, Spinach Artichoke Dip, Cheese Ball, a Zebra Cake, Pink Lemonade Cupcakes, and little Sesame Ginger Meatballs.  We all had a wonderful time, the weather was amazing, and it was a fun party all around.  Whew!  Now it’s back to slower days and easier menu plans.

  1. Tonight we had leftover chicken that was tucked in the back of the fridge, Cheesy Rice, and broccoli
  2. Spaghetti
  3. Stuffed Peppers (planned extra for leftovers, as usual)
  4. Chicken, Sausage, and Potatoes (I change it slightly and usually add a veggie like brussels sprouts and my own blend of spices-rosemary, thyme, garlic, pepper, etc)
  5. Tofu Stirfry
  6. Corned Beef and Cabbage with Irish Soda Bread (the white version).  I’m excited!
